FRIED ABACUS

Fried abacus with lots of favourite ingredients. Nothing beats homemade....simply delish.

RECIPE:

INGREDIENTS: 600 gm yam 300 gm tapioca flour 150ml boiling water 2 tsp salt 2 tsp sugar 2 tbsp pork fat 3 tbsp oil 2 sliced shallots 1 tbsp chopped garlic 300 gm minced pork 50 gm dried prawns 5 mushrooms - soak in water and cut into cubes 1 tbsp soy sauce 1 tbsp black sauce 1 tsp pepper 1 tsp salt 1 tsp sesame oil 2 tbsp hua teow wine 1 bowl water Cornstarch thickening

METHOD: Sliced yam and mix in two tsp. salt,2 tsp sugar and 2 tbsp pork fat to slice yam. Steam for 25 mins.

Mash steamed yam with fork .

Add in tapioca flour.

Add in boiling water a little bit at a time.

Mix till dough is firm and smooth.

Roll dough into one inch and cut into a ball.

Make a dent in the centre.boil abacus seeds into water till they float to the top.

Transfer to cold water and let it cool down.

Drain and add a little oil .

Mix well so that they won't stick together. Heat 3 tbsp oil on wok.

Add in shallots and garlics. Stir fry to fragrance and add in ingredients and seasonings. Finished with chopped spring onion and serve.
